For tomorrow and the weekend, we have Stansted Saddleback pork, Stansted venison, Southdowns lamb and some 33 day dry-aged sirloin steaks. We also have Watergate partridge and pheasant, and some oven ready local wood pigeon. We are building up our stock, so we don’t have everything, but we are working towards giving you a full compliment of local meat. We are especially keen to get mutton and hogget on the menu when the weather gets a bit cooler, as well as goat.
We are working with the land tennants at Stansted to get as much produce from the estate as possible, and will also be getting some Sussex beef from Lordington farm (once a Stansted farm) which is reared on watermeadows. Do let us know if there is anything in particular you would like to see, feedback would be much appreciated.
For larger joints and specific cuts, it would be great if you could let us know in advance so that Gavin can have it ready for you. We are also taking Christmas orders for the extremely organised amongst you, but there is plenty of time for the rest of us slackers….
