Our dressed crab arrive every Friday, having been cooked and hand-picked that same morning by Rick on Hayling Island. He in turn gets the crab directly off Tony who fishes a number of pots from his boat off Hayling. The crab is landed and dressed less than 10 miles from the farm shop.
Unlike most dressed crab that you buy, this has not been pasturized, so is sweet, full of flavour and absolutely delicious. Rick separates the white meat from the brown so that you get a crab shell crammed with chunky white meat, with a pot of rich, smooth brown meat on the side. With most crab, the two are put together in one shell with a smattering of white meat hiding the brown meat below.
Fresh crab makes the best sandwiches – decent brown bread, mayonnaise, crab, a squeeze of lemon and seasoning. If you want to make an incredible pasta, then finely chop 2 cloves garlic, 1 small red chilli, and the juice of a lemon. Add the cooked pasta with a bit of the pasta water, toss, season and serve with a sprinkling of parsley. Easy luxury with one crab feeding three pasta portions.
