This is a classic English soup that involves no cooking, and is delicious and refreshing in equal measure. This is a generous serving for two and can be kept in the fridge for two days.

Set aside half the mint and yogurt, then blend all the ingredients until smooth.  Chill until cold, then serve with a dollop of yogurt, a mint sprig and crack open the rosé.  Welcome to a decent English summer!

  • 1 cucumber, halved lengthways, deseeded and roughly chopped
  • 2 garlic cloves, crushed
  • 1 small avocado, chopped
  • bunch spring onions, chopped
  • small bunch mint, chopped
  • 150ml pot natural yogurt (Bere Dairy yogurt is delicious)
  • 2 tbsp white wine vinegar
  • Sprig of dill
  • Pinch of cumin
  • Juice of 1/2 lime
  • salt to taste
