Rare-breed pork differs from the commercial breeds that make up most of the pork in the UK. It is not as fast growing, so the pork is denser, less stringy and with a good layer of fat that provides excellent flavour and ensures the meat is succulent.
Our pork comes from a small producer in Birdham, just outside Chichester. This week we have saddleback pork, although sometimes they are crossed with a Gloucester Old Spot – we highly recommend them both.
