A fresh South Coast plaice is a lovely tasting fish, simple to bake whole with a bit of white wine, lemon juice and seasoning and at £5.50 per kg this week – it’s a good feast for two people. You can tell how fresh a plaice is by how bright it’s orange spots are, as well as how bright the eyes are.
Pete is also landing cod – although he has almost come to the end of this month’s quota as there is so much cod around in the channel at the moment.
There are also one or two gilt-head bream around – these are superb eating fish on a par with bass but without the price tag. It’s very early in the year for them (they normally don’t appear until the middle of March) and so there aren’t many, but hopefully this is the start of the bream season.
