Not only is cucumber soup incredibly tasty and refreshing, it is also very simple to make (although I have to confess that my wife Emily made this and also took these photos! © www.emilymott.com – royalties on the way).  Cucumbers are in season and you can add a sprig of herbs or edible flowers to finish.

1 cucumber
1 pint yoghurt
juice 1/2 lime or lemon
1 crushed garlic clove
2 spring onions or equivalent onion
1/4 teaspoon cumin
1/4 teaspoon coriander
chopped mint—10 leaves
salt , pepper

Blitz in the blender, season to taste and add edible flowers if you wish.
