Smoked Trout and Watercress is a perfect luxury lunch that is an ideal treat for Mother’s day – it’s healthy, local and delicious. The trout and salmon are smoked at the award-winning Weald Smokery and is outstanding.  It combines perfectly with Watercress that we get from Hairspring Watercress just down the road in Hambrook. Not only does the watercress provide a crisp, peppery crunch, but it’s also packed with vitamins and nutrients including Vitamin K and A as well as significant levels of cancer-fighting glucosinolate compounds.

For a truly simple but delicious meal, try making a salad with one bunch of watercress, segments of two blood oranges, and make a dressing by mixing 2 tbsp of olive oil with 1 tbsp squeezed juice, the finely grated zest of one orange, a pinch of sugar and a little salt and pepper.  Toss the leaves with this dressing just before serving and scatter the segments of orange among the leaves. Have the smoked trout on the side.
