Finally our dressed crab is back – as the warmer weather means the crab start moving and get caught in larger numbers to ensure a consistent supply.
Our crab is caught by Tony from Hayling Island on his boat the K2 and is cooked and dressed by Rick on Friday mornings shortly before he delivers them to the shop. Each shell is jam packed with white meat, with the brown meat in a separate tub. You do not get any hidden surprises when what looks like a shell full of white meat actually turns out to be mostly brown meat with a deceptive layer of white on the top.
This is the finest quality crab, locally caught and picked. It is unpasteurized, so needs to be eaten within two days of purchase.
Perfect for a simple crab sandwich, or excellent pasta. To make the pasta, you need one dressed crab.
Finely chop 2 cloves garlic, 1 small red chilli, and the juice of a lemon and add to the crab meat. Add the cooked pasta with a bit of the pasta water, toss, season and serve with a sprinkling of parsley. Easy luxury with one crab feeding three people or two extremely greedy ones.
