This is the ultimate BBQ party food – a grass-fed Hampshire, butterflied leg of lamb that has been marinated in garlic and rosemary just ready for the grill.
Our lamb is seriously tasty at the moment, tender and full of flavour. With the lamb butterflied, it doesn’t take long to cook – and although you can cook it in the oven, you will get the best flavours if you use the BBQ, with a crusty, smokey outer edge and succulent meat in the middle.
I would recommend searing the butterflied leg of lamb on a high heat to begin with for about 5 minutes on each side, giving colour and flavour, but move the lamb (or move the charcoal) away from direct heat to avoid flare ups and cremating the butterflied leg and cook for a further 30 minutes. Allow to rest before slicing and serving with a Nutbourne Tomato salad and roasted salad potatoes (cut in half and roasted with whole garlic cloves and quarters of lemon).
