BBQ Lemon Sardine recipe
Fresh Cornish Sardines are being landed at the moment, and they are ideal for cooking on the BBQ in the summer heat. This recipe is incredibly simple, especially if you order the sardines already butterflied and makes for a delicious lunch or supper. You can eat these without worrying about bones and are great with some boiled new potatoes, or a nice crunchy baguette with olive oil. Add in a local tomato salad and some blanched runner beans and you are away.
Serves 6 as main course.
Ingredients:
- 24 Fresh sardines
- 2 Lemons
- 4 Sprigs of thyme
- Salt
- Pepper
- Extra virgin olive oil
Method:
Cut each lemon in half lengthways and then slice each half into six thin slices.
Lay a sheet of kitchen foil over your opened pre-heated grill.
Take each butterflied sardine and close it, then stuff a lemon slice between the fillets.
Place the thyme sprigs over the top of all the fish and season well with salt and pepper.
Lay another sheet of kitchen foil over the top and close the grill.
Barbeque for 5 minutes each side.
Serve with a generous drizzle of olive oil with salad or fresh bread.
