Thai Green CurryGavin is currently marinating some rare breed pork chops in his homemade Thai Green Curry Paste – and we have a recipe to compliment the marinade so that you can prepare yourself a seriously tasty, warming curry.  The marinated pork chops are £9.50 per kg and if you would like us to put some aside, just let me know. We also have locally grown organic butternut squash from Wayside organics available this week.

The marinade consists of lemongrass, coriander, chilli, shallots, kaffir leaves, shrimp paste, lime juice, garlic, black pepper.

Rare breed pork chops marinated in Stansted green Thai curry paste. £9.50 per kg

  • 2 pork chops marinaded in Thai green curry paste
  • 1 tin coconut milk
  • 1 small onion fine diced
  • 200g 2 cm diced butternut squash
  • 1 medium sized courgette cut into thin rounds

Method

Roast pork chops in a hot oven (220°C gas mark 7) in a high walled dish with the onions until they start to brown.

Turn the oven down to 170°C and add the coconut milk and cover and cook for 20 minutes.

Add the butternut squash and cook for another 20 minutes. Add more milk or water if you feel the sauce is getting too thick.

Add the courgettes and let rest for 5 minutes.

Serve with rice noodles or rice
