We will be running a hands on butchery course on Saturday 13th January, 4-6pm – £65
Our Master Butcher, Lee, will demonstrate how to butcher a whole pig into the different cuts, as well as making sausages.
The rare-breed free range pork was reared by Scott’s Farm in Storrington on the South Downs and is consistently excellent. Lee will show you the difference in the quality of the meat compared with conventional supermarket pork, before giving you the opportunity to bone out a shoulder. You will learn basic knife skills around the butchers block, before moving onto the sausage making.
Gavin is a highly qualified chef and he will describe how best to prepare and cook each cut while suggesting recipes. This will be a hands-on course, so come prepared, with the sausage making in particular an enjoyable group effort.
Pork will be available to take home afterwards.
