The River Test is renowned for its trout fishing, but I personally think that the best way to enjoy trout is when it has been delicately smoked.  We now have smoked trout souurced from the River Test in Hampshire and farmed by Chalk Stream Farms.  This sustainable farm provides the tastiest, leanest and richest trout in the UK which is reared in its natural habitat.

Drawn from sustainable farms on the Rivers Itchen and Test, these world famous spring-fed chalk streams with ‘gin clear’ water, constant water flows and excellent light and vegetation create havens for the fish. These beautiful chalk streams give the fish a distinct, sensational taste whether fresh or smoked.

You can enjoy smoked trout in three ways – The cold smoked trout is delicate and delicious – on buttered bread with a squeeze of lemon.  The Hot Smoked Trout has a more robust flavour with a flaky texture and this can be enjoyed in salads, pastas and Asian stir fries. Finally there is their smoked trout pâté – scrummy with a dab of horseradish or watercress and sourdough bread.
