The Rib of Beef – the finest English Sunday lunch should have rib of beef surrounded by crunchy roast potatoes, Yorkshire pudding and buttered Purple Sprouting Broccoli. There is truly no finer sight or taste – with the meat melt-in-the-mouth tender, oozing with flavour and with crackled fat, browned ribs and juicy, red meat.
This week’s beef is Aberdeen Angus and comes from Chalcroft Farm just outside Southampton– grass fed with no added growth promoters or hormones. We are currently able to offer marbled ribs of beef at the great price of £14.99/kg as this week’s special (20/02/19) compared with the usual £20/kg. So come and take advantage while you can. You can buy the ribs this week and Lee will age them for you.
We age the beef on the bone for as long as you want. By dry-aging the beef, moisture evaporates from the meat leading to a greater concentration of flavour and taste, while the beef’s natural enzymes break down the connective tissue to create more tender meat.
You can have the rib cut to the size you want, French trimmed by Lee or left whole, or even made into tomahawk steaks for two.
