We have some Stansted Estate honeycomb available this weekend. Collected by John the Bee Man, the bees have had a fantastic year across the wildflower meadows of Stansted, producing some truly excellent honey.
This is a delicious salad that combines salty and sweet with the peppery rocket. You can use clear honey, but you don’t get the occasional sweet bite that honeycomb gives. You can use any salty cheese like Pecorino or Parmesan, but in this recipe I’ve used the Hampshire based Beau Farm Goats Cheese Brie.
Ingredients Per Person
- Generous handful of Rocket
- 50g Beau Farm Goats Cheese Brie
- 50g walnuts
- Olive oil
- Black Pepper
- Honeycomb 6 small cubes.
Toss all the ingredients together except the honeycomb that you can place amongst the dressed leaves. You can add slices of pear for more substance, but as I don’t like pears, I’ve left them out on this occasion.
