Tom has been working here for a number of years but has renewed his commitment and signed up to an apprenticeship scheme with Highbury college (Level 3 Chef de Partie).  Tom will gain qualifications while continuing to work with us (he’ll keep his living wage, but will also work extra time for his course at the apprenticeship rate) and it’s a win-win for all of us.

Adam will be training him up in our kitchen, and Tom will also be working at the college for one day a week. In addition, Tom will continue to work in the deli with his excellent cheese knowledge and can still make the best coffee this side of Milan. He will be working a little bit harder and with a clear focus and we’re excited to continue building our skill level here at the farm shop.

Tom produced an excellent meal for his assessment, has a natural ability with flavours and is developing his technical skills. Watch this space.
