With another week of sunshine ahead of us, it’s time to get wood-fired inspired and try out some new dishes on the BBQ.
We start with duck burgers from Creedy Carver. These burgers are made with 90% duck, the only other addition being fresh spring onions, 5 spice, and seasoning. Add some hoisin sauce from The Garlic Farm, and some crisp cucumber slices in a brioche bun and you are on to a BBQ Bonanza. Simple to cook, and yet seriously delicious and different.
Our butchers, Lee and Ray are also preparing a whole selection of bespoke BBQ cuts, including Beef Rump Kebabs (18.99/kg), free-range Chicken kebabs 14.99kg, and Spicy Lamb Koftas. (£6 for 4).
Aged ribeye steaks £29.99/kg are perfect on the BBQ, with a bit of caramelization and char giving new levels of flavour. You can rest the steaks and then slice into strips to top on a salad. You can treat a butterflied leg of lamb (£19.99kg) like a large steak. Marinate overnight with garlic, rosemary and anchovy paste, then grill for about 15-20 minutes each side for medium-rare.
If you are thinking of a bit of slow cooking, then we have meaty pork ribs, beef brisket, or shoulder of pork that needs at least 5 hours of cooking. It’s time to bring out the Big Green Egg and do an overnight cook for the best pulled-pork you can imagine.
