Alongside a glorious range of Easter Eggs, truffles and chocolate bars, we also have some more unusual Easter Treats, such as Sussex Simnel Cake and a beautiful  Italian Easter cake is called Colomba (which means dove in English). Colomba is very similar to panettone, made using real butter, eggs, milk, sugar and natural yeast; unlike panettone, it usually contains candied orange peel and no raisins. The dough is then fashioned into a dove shape and finally is topped with pearl sugar and almonds before being baked.

Lee will have lamb, beef and venison roasting joints for Easter, but there is a national shortage of lamb this year, so prices are higher than usual. Many farmers pushed stock forward before the January Brexit deadline, while Covid has also reduced staff numbers at abattoirs, and the lamb market has been struggling to keep up with demand.  You can pre-order lamb with Lee if you want to, as it would be good to get an indication of our customer demand, but it’s also worth considering shoulder this year.  It’s such a good cut when slow cooked.

Wild garlic is out early this year, and a wild garlic salsa verde would be the perfect spring accompaniment to lamb.  The colour is so vibrant, it’s a sauce that fires up the plate.
