We have some beautiful aged Dexter Beef that has been hanging for 3 weeks and is now tender and delicious.  The Dexter comes from Westerlands Farm near Petworth, that are now farming regeneratively while enhancing the farm’s biodiversity.  Regenerative farming works to improve soil health by increasing soil organic matter and protecting soil biology, helping to retain water and carbon.  The small size of the Dexter and their ability to forage a wide range of pasture and grasses, while providing natural fertilizer makes them an invaluable part of this regenerative farm.

The Westerland Dexter cows are born and raised outdoors and remain on pasture all year round. They enjoy a grass-fed, stress-free life and they love our pure, sweet, bore-hole water. High-welfare livestock management is important to Westeraland, and they use their cows as ‘eco-engineers’ to nourish the soil and to help with habitat creation and biodiversity growth. Research suggests that grass-fed meat has higher levels of “good fats” such as Omega 3 and higher vitamin levels.
