Every spring, Louise brings around 20 freshly laid goose eggs to the farm shop every few days from her local flock. These impressive eggs may look a little daunting, but they’re a seasonal specialty well worth trying. Goose eggs are richer and more flavorful than hen’s eggs, with a striking golden yolk that will elevate any breakfast. They’re about three times the size of a hen’s egg, but in recipes, you can substitute one goose egg for two large hen’s eggs. Thanks to their larger yolk, baked goods made with goose eggs turn out denser and more moist, adding an extra touch of indulgence.
They are a richer alternative to hens eggs and can be the perfect substitute for omelettes, frittata, scrambled, fried or poached, but if you want a boiled egg, you’ll need a bigger egg timer.
Boiled Goose Egg Timings:
Soft-Boiled (Runny Yolk): 9–10 minutes
Medium-Boiled (Slightly Soft Yolk): 12–13 minutes
Hard-Boiled (Fully Set Yolk): 15 minutes
