Fish BBQ Course on the Big Green Egg

This fish cookery course gives you some inspiration on how to use different types of fish on the BBQ for the best results.

While we will be using a Big Green Egg to demonstrate this course, you could use a conventional oven and grill, or another brand of BBQ.

We will be preparing the following:

  • Fish Stew
  • Fillet of fish on a plank
  • Whole fish in newspaper
  • grilled prawns / squid
  • shellfish.

(We expect Gurnard, Black bream, seabass, sea trout, trout, mackerel) cod or monkfish)

You will learn how to enhance the flavour of the fish with smoke, as well as using different techniques to cook the fish in different ways, from broiling to grilling, smoking to steaming.  We will use the best fish that is in season, depending on what our friends at Fresh From The Boat are landing that week, but you will learn that the techniques can be applied to any fish, giving you a broad repertoire of skills to take home with you.  We would expect to use some of the following: Gurnard, Black bream, seabass, trout, mackerel, cod prawns, squid, clams, mussels.

At the end of the course, we will sit down to enjoy our fish meal.

We will also talk about making the best of your Big Green Egg, with set up, temperature control and other advice.

This course will be run in the Farm Shop Courtyard, so please come dressed for messy cooking and the weather.
