Game Preparation Course

In this game preparation course you will learn how to deal with fur and feather – with a demonstration on plucking and skinning, butchery techniques and cooking advice.
Wild game is sustainable, healthy and delicious. Venison, rabbit and pigeon are regarded as pests, with deer and wood pigeon at historically higher numbers than ever. The principles of plucking and dressing birds are the same, and each participant will have the opportunity to try their hand at plucking.
Our butcher, Gavin, will demonstrate how to portion a rabbit and a pheasant for the pot. He will also demonstrate venison butchery – showing which parts of the venison are used for different dishes.
Learn about how venison is sustainably managed on the Stansted Estate and why eating game is good for you and our local environment.
This will give you a clear understanding of how to prepare game, so that if you are presented with some pigeon, mallard or rabbit, you will be confident in plucking or skinning it ready for a healthy, wild supper. It’s a great skill and helps you to understand where your food comes from. Gavin will also give handy cooking advice for the different cuts and types of game.
Refreshments and a delicious homemade game terrine with pickles will be included on the day.
