Gavin’s Pasta Course

I have been studying Italian cuisine for 25 years. I have worked and lived all over the world and have experienced many different pasta tastes, dishes and techniques. I love the traditions and how pasta has evolved .
On this pasta course at Stansted Park farm shop, you will learn about regional recipes and techniques. As well as making the three pasta doughs, we will follow the process through and learn some beautiful dishes, using the best local produce. I look forward to sharing my experiences and knowledge so that you can go home confident of repeating the pasta recipes that we make during the day, amending the sauces depending on what is in season:
The first pasta dough will make Tagliatelle & Cannelloni:
- Hayling Island crab & chilli tagliatelle bread crumb salsa
- Spinach & ricotta cannelloni
The second pasta dough will make Ravioli & Tortellini
- Chicken tortellini – carbonara sauce
- Oxtail ravioli – truffle
The third pasta recipe will make Gnocchi
- Potato & thyme gnocchi – wild mushroom ragu
This will be a hands on course where you will make the dough and shape the pasta, before sitting down to enjoy a meal that you have helped to create.
