Hands on Pork Butchery Course

This is an intensive hands-on Pork Butchery Course for up to 6 people. You will start with a whole free-range pork carcass and between the 6 of you, under Gavin’s expert guidance, you will break down the carcass. At first it is split into primal cuts, before you then move onto the individual cuts that are recognizable in the butchery counter.
You will learn basic knife and butchery skills as well as finding out where each cut of meat comes from. You will learn about the offal and the hidden cuts and how best to use them. This knowledge can be applied to most butchery. Gavin also discusses cooking and curing techniques as well as talking about sausage making.
At the end of the day you will get the chance to take away a pork box from your work for an additional £30.
