Pork Butchery Course

Gavin Leigh, the Stansted Farm Shop butcher, will demonstrate how to butcher a whole pig into the different cuts, as well as making sausages and bacon.
The rare-breed free range pork was reared on the South Downs, and Gavin will show you the difference in the quality of the meat compared with conventional supermarket pork.
Gavin is a highly qualified chef and he will describe how best to prepare and cook each cut while suggesting recipes. This will be a hands-on course, so come prepared, with the sausage making in particular an enjoyable group effort.
You will be able to take a pork box (at 50% discount) at the end of the day, along with recipe ideas and sausages.
