Pork Butchery Demonstration

Lee will demonstrate how to break down a whole pig carcass into the constituent cuts, boning and rolling joints, pork chops and belly.
We will be joined by Richard Scott who rears the pigs at his farm in Storrington in the South Downs National Park. You will be able to ask how the pigs are reared, why he uses Duroc, and any other questions you have about proper, free-range pork. Our pork all comes from Scott’s Farm in Storrington. The pork is completely free-range, roaming pastures on the South Downs, with high welfare the priority. The breed is a duroc mix, which provides excellent tasting meat with inter muscle fat that ensures succulent, juicy pork.
Lee with then show you how to mince, stuff and link sausages. We will have pork available to purchase at the end of the course.
We will have pulled pork sandwiches served at the end of the demonstration.
