Spring Foraging Course

We will be running a Spring Foraging Course on the Spring Equinox with a walk around Stansted, discovering and learning about all the wild foods that you can gather and eat, or use in remedies.
The course will start with breakfast and coffee at the farm shop while we talk about best practices, ensuring a sustainable harvest. We will also discuss means of identification and tools for the job.
There will be a lengthy walk, so please bring suitable clothing and boots depending on the weather. During the walk, you’ll learn what to look for depending on the terrain, with mature woodland and pasture offering alternative opportunities for foraging.
We will then prepare what we have gathered, talk through recipes and healthy eating, and cook our lunch with the addition of some wild game.
We will look at traditions, folklore and apothecary using wild greens in foods and drinks. We will hope to find a wide variety of spring greens such as cress, mallow, wild garlic and many others. We’ll keep an eye out for mushrooms, and use birch, beech, spruce and pine.
