While we love our local cheeses, there are some continental cheeses that are simply too good not to have in the cheese counter, and aged Comté is one of them. Sourced from the Franche-Comté traditional province of eastern France, on the Swiss border, made from unpasteurized cows milk of the Montbéliarde or French Simmental breeds, that have fed on fresh pasture only, this is a sublime cheese.
Aged for at least 18 months, it is a smooth, dense cheese with complex flavour. The ageing process creates amino acid crystals, combined with the very rich, buttery texture with tastes such as butter, chocolate, toast, fudge and hazelnuts.
Delicious on it’s own, diced in salads, melted or as an ingredient, this is an indulgent, wonderful cheese.
