Cornish Kern is made by Lynher Dairies, the same cheesemakers as Cornish Yarg. Kern is matured for 16 months, and is more intense and dense than their Yarg. This cheese started with the idea of a gouda-type recipe, and evolved through the addition of Alpine starter cultures. Kern is coated in a black wax-type coating. It offers a perfect balance of sweet and nutty notes, with hints of caramel and a subtle tang. The cheese’s texture is firm yet creamy, and makes a perfect eye-catching piece on a cheeseboard. Its long aging process and meticulous craftsmanship result in a cheese that is rich, highly flavoured, and completely satisfying.
The word ‘Kern’, is Cornish for ‘Round’. Cornish Kern won Supreme Champion of the World Cheese Awards 2017.
