Rædwald celebrates it’s second ever season, following the debut of this incredible cheese from Fen Farm, the makers of Baron Bigod.  It’s a Suffolk take on a traditional French Reblochon, with a crunchy, toothsome rind and smooth oozing paste of a classic Reblochon, but the flavours are a deeply Suffolk experience.  It speaks of briney sea air, smokey bacon, hazelnuts wet from the shell, hidden fungi, mossy bark and the cool weight of woodland air.

This cheese has been created to use the rich, high-cream milk that their free-ranging Montbéliarde cows produce in the depths of winter. The large surplus of winter milk is too creamy for making Baron Bigod but makes incredible Reblochon-style cheese. For Rædwald, Fen Farm use the afternoon milk, which is the very creamiest, while the lighter morning milk is for making Baron Bigod, which is tastiest when made with a lower-cream milk.

Rædwald is only available between January – April each year, making it a true celebration of the creamy milk produced in the deep Suffolk winter and early spring.
