Wyfe of Bath cheese looks and tastes like old England, with a beautiful basket shape and an aged rind that gives way to a beautiful caramel yellow, lightly bubbled cheese centre.   This cheese takes its name from Chaucer’s Canterbury Tales, and the Wyfe of Bath had a strong appetite for pleasure and indulgent foods.

The cheese is made by hand by Graham Padfield at Park Farm near Bath, from his own herd of organic Holstein Fresian cows, and the cheese is aged for 4 months.  The taste is sweet and rich, and redolent of buttercup meadows, and the texture is giving and supple. It’s similar in style to a young gouda, but it is not as dense as the cheese is not pressed.

It’s a semi-hard cows milk cheese made with a vegetarian rennet.

Available in 200g portions.
