Levin Down is a deliciously rich and creamy soft white cheese that melts in the mouth. Created onsite using the Farm’s organic milk, Levin Down is made with natural cultures.
Sussex Brie is made by Sussex cheesemaker Alsop & Walker. It’s a creamy grassy tasting cheese, again with a natural edible white rind. Made from cow’s milk and much like the camembert will continue to mature in a fridge becoming softer and stronger for up to seven weeks.
Baron Bigod A creamy, white bloomy-rind cheese handmade at Fen Farm Dairy from their own raw Montbeliarde cows milk. It has a smooth silky texture and a golden curd, with long-lasting warm earth, farmyard and mushroom flavours. This is a larger, cutting brie in the style of a Brie de Mieux.
The Isle of Wight Soft is a soft white surface mould ripened pasteurised cheese first made in 2006. It fits nicely in between the brie and camembert brackets. It is sold between 2-4 weeks of age and has a maximum 9 week shelf life. When young this cheese has a firm-textured, sharp lactic flavour. As it ages the texture changes to a softer paste with the flavour becoming more familiar to the taste of camembert.
St Endellion is a delicious luxury Cornish Brie hand-made using Cornish double cream to create a rich and creamy soft cheese. Using milk and cream straight from the farm, combined with specially selected cultures provides a traditional ripening style of Brie.
